Seared Ahi Tuna Salad

Perfect for nights when cooking needs to be kept to a minimum– and when ahi tuna is on sale!

INGREDIENTS:

  • 1 tablespoon of olive oil

  • 4 ounces of raw ahi tuna steak

  • 2 cups of mixed salad greens

  • 1/2 cup of mini cucumbers, sliced

  • 1/2 cup of edamame, shelled

  • 1 medium carrot, grated or peeled into ribbons

  • 1 green onion, green part only, sliced

  • Sesame seeds, to top (optional)

DRESSING:

  • 1 half of a lime, juiced

  • 1 tablespoon grated fresh ginger

  • 1 tablespoon of soy sauce or tamari

  • 1 tablespoon of olive oil

DIRECTIONS: 

  1. Heat the oil over medium heat in a sauté pan.

  2. Season tuna with salt and pepper and sear for two minutes on a side.

  3. While tuna cooks, mix dressing ingredients together.

  4. Pile mixed greens, cucumbers, edamame, carrots and sliced green onions; place seared tuna on top.

  5. Drizzle dressing over both tuna and salad; top with sesame seeds, if desired.
