Veggie Fried Rice
This better-than-takeout fried rice is perfect when you’re tired of cooking and cleaning/don’t have a lot of groceries/get home late and need something to eat FAST. I rely on freezer and pantry staples to pull this balanced, plant-based dish together in no time. Omit the butter to make it dairy-free and vegan, otherwise it’s gluten-free and low in FODMAPS.
INGREDIENTS (SERVES 1):
- 1/2 cup of brown rice (I use Trader Joe’s frozen, precooked rice) 
- 1 tablespoon of olive oil (FODY’s shallot-infused oil would be great for adding onion flavor!) 
- 1 tablespoon of butter 
- 1 cup of veggies (Use whatever you have on hand! My go to’s are: carrots, broccoli, and red pepper) 
- 1 egg, scrambled 
- 1 teaspoon of sesame oil 
- 1 to 2 tablespoons of tamari or soy sauce 
OPTIONAL TOPPINGS:
- Green parts of a green onion (scallion) 
- Sesame seeds 
- Hot sauce 
DIRECTIONS:
- Pop your Trader Joe’s frozen rice in the microwave for 3 minutes. 
- Heat olive oil and butter in a pan over medium heat and sauté veggies until they start to soften. 
- Add frozen peas or edamame and stir to combine. 
- Pour in egg and scramble with veggies. 
- Reduce heat and add brown rice, sesame oil and tamari and stir to combine. 
- Top to your heart’s desire!
